Avocado Toast Meets Pizza - Yes You Read That Right
If you’ve tuned into my Insta stories lately, you might have noticed that aside from my darling husband, avocado toast is my second love. It is my all time favorite comfort food - so much that I have mastered the art of traveling avo toast. The last time I flew, the security sensors went off as my bag passed down the belt. A TSA gal dug through my backpack looking for the ‘weapon’ in disguise, which ended up being a butter knife to go with the whole avocado and pre-toasted bread hiding in my bag.
I kept eating avo toast for breakfast and still managing to crave it later on in the day when dinner time rolled around. One night Justin wanted pizza and I was tired of missing out due to my gluten + dairy rejecting body. I pulled out a frozen cauliflower crust (thankful to my past self for picking that up) and threw some veggies on top. To spice it up and achieve a ‘cheesy’ flavor I sprinkled some vegan-lover’s nutritional yeast all over the veggies.
When it came out of the oven I took a slice and it was pretty good but the creamy layer traditionally found on pizza was disappointingly absent. With no dairy-free cheese on hand, I had to get creative. Here’s where the beautiful marriage of avocado toast and pizza began…
Sliced avocado was the perfect substitute for cheese and is actually a wholesome choice when it comes to pizza toppings. A few moments later, and what do you know - I literally ate the whole pie all by myself. Proud moment, I know.
1 frozen pizza crust (I used a GF cauliflower crust)
2 tsp. minced garlic
Sprinkle of sea salt
1 c. sliced mushrooms
1 c. chopped kale
¼ c. nutritional yeast
1 avocado, halved
Red chili flakes
Lemon wedges (opt.)
Preheat the oven to 400°F. Rub frozen pizza crust with minced garlic, sea salt and rosemary. Thinly slice zucchini and arrange on crust with mushroom and kale. Place in oven for 12-15 minutes. Sprinkle nutritional yeast on top and return pizza to oven for 5 more minutes. Slice avocado halves and finish off your pizza with sliced avocado, red chili flakes and a light squeeze of lemon.
