Beauty Boosting Breakfast Bircher

There’s something magical about waking up to the sunlight beaming in your bedroom windows. Now that we’re nearing summer, I’ve been enjoying rising with the sun and taking a few extra moments for myself in the morning. Make ahead breakfasts are perfect for when you don’t feel like fussing around in the kitchen, but want to start your day nourished and energized.

Inspired by my time living in Switzerland, I came up with this grain-free version of a classic cold porridge they serve in the alps called Birchermuesli. I was obsessed with this satisfying, creamy breakfast and would sometimes even eat it for dinner or dessert.

The intentional ingredients in this recipe are full of benefits for your skin and overall wellness. I love a dish that tastes good and does good for your body. Feed your soul and your skin every morning by prepping this bircher the night before and storing in the fridge. Top with crunchy superfoods, vitamin-rich fruit + a drizzle of almond butter in the am before you head out the door!

Beauty Boosting Breakfast Bircher

  • 1/2 cup almond milk

  • 1/2 tsp vanilla

  • 1/4 c. coconut yogurt

  • 1 tbsp each - flaxseed, hemp seeds, shredded coconut

  • 1 tbsp coconut flour

  • 1 scoop vanilla collagen powder

  • Stevia or raw honey to sweeten

  • Dash of Himalayan salt

  • Flavor add-ins (listed below)

3 flavor variations :

Apple pie - ¼ shredded apple + ½ tsp cinnamon

Carrot cake - 1 shredded carrot + ½ tsp pumpkin pie spice

Choc Zucchini - ½ shredded zucchini + 1 tbsp raw cacao powder

Combine the almond milk, vanilla and yogurt. Add in remaining ingredients and flavor variations, if desired. Store in the fridge overnight in a glass jar for the seeds and coconut to soak up the liquid. In the morning your bircher will be thick and creamy!
