Life Changing Fluffy Vegan GF Pancakes Made With 5 Ingredients!
I have been on a quest to craft the perfect pancakes that are both gluten free, dairy free… oh yes and banana free because I wayyy overdid the banana pancake trend years ago. I wanted a recipe that would dupe the fluffy pancakes I enjoyed as a little girl. The key ingredient to these life changing cakes is coconut yogurt! They rise, bubble, brown just like the classics and even past my husband’s taste test (he confirmed they taste gluten-ful).
I had quite a blast decorating my stack of fluffy cakes with a dollop of coconut yogurt, strawberries, passionfruit, goji berries, golden berries, and a drizzle of maple. Treat them however you’d like (peanut butter is always a good bet). Let me know if you try them - and if they change your life!
5 Ingredient Fluffy Vegan Pancakes
½ c. buckwheat flour
½ c. coconut flour
1 c. coconut yogurt
1 c. almond milk
1 tbsp baking soda
Mix all ingredients with a whisk in a medium bowl. Heat a non-stick skillet over medium heat and pour ⅓ c pancake batter into pan to make several cakes. Wait until the batter is bubbled and flip the cakes. Repeat until the batter runs out. Serve with your favorite toppings - mine are listed above - and share with someone you love!
